About Quarry Ridge Winery

Quarry Ridge Winery sits on the east shore of Cayuga Lake outside Union Springs, on a ridge where limestone and shale break through the surface and give the place its name. The rocky, free-draining soils and the steady wind over the exposed slope keep the vines cool and the acidity high, and from the timber-framed tasting room, opened in 2020, the view runs across the vineyard and down to the water. The winery was founded in 2018 and changed hands in 2025, when Matt and Carre Doyle bought it; Matt grew up in Finger Lakes wine country and has managed vineyards across the region since 2009, so the estate now draws on family-farmed sites on Keuka and Seneca Lakes as well as the home ridge.

The range is built around cool-climate varieties: Riesling in both a dry and a cask-aged version, an unoaked Chardonnay the house describes as elegant, Sauvignon Blanc, Gewürztraminer, a rosé, Pinot Noir and Cabernet Franc. The house describes its Riesling as bright and mineral-driven, which is what this lakeside limestone tends to give, and the vineyards are farmed under New York's sustainable winegrowing program with a minimal-intervention approach in the cellar.

Tastings are relaxed: pick any four wines for a self-curated flight at the bar, add a cheese and charcuterie board, and take it out to the patio. Guided vineyard walks end in the private Quarry Room, and the barrel room built in 2019 is part of the tour. Groups of eight or more need to email ahead; smaller parties are not asked to book. A yoga-and-wine series, a winemaker's dinner and a holiday market fill out the calendar, and the space hosts private gatherings of up to a hundred.
